Cake dough
8 egg yolks
1 1/3 cups of sugar (210 g)
2 cups of ground walnuts (200 g)
100g softened chocolate
10 egg whites
Filling
4 eggs
1 cup of sugar (160 g)
250g softened butter
150g melted chocolate
ground walnuts to dust the cake
Preheat oven to 350F (180C). Mix the egg and sugar until fluffy. Blend in chocolate and walnuts. Whip the egg whites separately in a cold bowl, make sure that there are no traces of egg yolks in the mixture. Blend the egg whites slowly into the chocolate mixture. Pour into prepared buttered spring-form pan. I use two pans, one with 2/3rds and the other with 1/3rd of the mixture. Bake for 40 min or until toothpick inserted in the middle comes out dry. Cut in three layers after the cake cools. Mix filling ingredients until smooth. Put filling between cake layers and around the cake. Sprinkle with walnuts.
